Another chicken idea......here's one I made earlier!

One whole chicken, a couple of lemons, some sweet peppers, shallots, garlic, carrots (not pictured!) and some spices.... 

slice, dice, or cut the vegetables, zest the lemon.....

fill the peppers with the prepared onions, garlic, carrots, and lemon wedges; stuff into the cavity, and then stuff in any remaining ingredients

chuck the zest over the chick! liberally sprinkle on the spices......

arrange potatoes in a roasting tray, place the stuffed chicken atop to allow the juices to roast the potatoes....

cook thoroughly at 180C until the potatoes brown, and juices run clear from the bird (cut into the thigh to check)....

portion, and enjoy!
