Steaks are cut from various parts of the beast. The marbling, flavour, texture and taste varies between the cuts (and the breeds!); many people have their favourite steak, and most have their preferred cooking time for their steak (I prefer mine "blue"). I don't often complain about problems I have with my food (I prefer to advise rather than whinge!), but an overcooked steak is something I will always complain about - you should always be asked how you would like your steak cooked, so if I am asked and I say "blue" I expect "blue" otherwise it gets returned to the kitchen. Enjoy your steak any which way you like.
When using this method, you simply put you fingers to your thumb and lightly press the base of your thumb; this feels how your steak should feel when gently pressed.
