Healthy eating!

A healthy summer lunch of a salmon fillet baked slowly at a low temperature with just a dash of olive oil, freshly squeezed lemon juice, and some cracked black pepper: 

Salmon baked with creamed horseradish, diced onion & gherkin, lemon and zest; served with lemon-
dressed mixed leaves, paprika and dill potato salad; garnished with tomato ðŸ˜‹

Homemade potato salad made with 2/3 soured cream and 1/3 mayonnaise, to reduce the fat content, some sliced gherkins, Dill, and smoked paprika - served here, warm, and with a horseradish cream dressing, mixed leaves simply dressed with olive oil and fresh-squeezed lemon juice and sliced tomatoes with a liberal sprinkling of cracked black pepper; lemon zest scattered over the plate lifted the aroma and added more flavour and a real 'Italian feel' to the dish!
